Aussi Steak & Dark Beer Pie

Ingredients
500g beef steak cut into tiny pieces
left over meat and marrow from beef stock bones
4 large finely chopped button mushrooms
2 onions
3 garlic cloves
130g leek
0,5L dark beer
0,75L beef stock
2 pastry sheets
3Tbsp flour
parsley, thyme
150g cheddar cheese
salt, pepper, sugar (optional)
Method
Chop onions, garlic and leek with a food processor till pasty.
Brown steak pieces in a hot pan. When browned take out of pan and set aside for later.
Add processed vegetables to the pan and cook for 5 minutes.
Deglaze with dark beer.
Add chopped mushrooms and cook till beer has evaporated.
Add flour and cook for 2 minutes.
Add beef stock and cook for five minutes to get gravy consistency.
Season with salt, pepper, sugar and herbs to liking.
Pro tip: if your gravy is too bitter because of the beer you used add a teaspoon of sugar.
Set aside too cool and thicken.
Once gravy has cooled down add diced cheddar cheese.
Butter a muffin tray and add pastry.
Fill with gravy and close with pastry lid.
Cook for 30 minutes at 220 degrees Celsius.
