Leftover Brisket Lasagne

What to do with leftover BBQ meat? Lasagne/Lasagna! We were inspired by atbbq (allthingsbbq) and made a leftover brisket lasagne (lasagna). We made our own ricotta and BBQ sauce to layer in-between the pasta sheets.

Ingredients

BBQ Sauce
1 onion finely chopped
1 large carrot grated
1 big clove garlic finely chopped
Big squirt tomato paste
500 g Passata
150 ml water
2 tbsp Ketjap Manis (sweet soy sauce)

BBQ Rub
Sonnontor 2tsp “rub me tender”
1 tsp smoked paprika
1 tsp fresh grind black pepper
Half tsp onion powder
Half tsp garlic powder

Ricotta
2 L milk
4 tbsp vinegar
Salt

Leftover BBQ meat (we used brisket)
Eggs
Cheddar
Grana Padano
Pasta sheets

Method

BBQ SAUCE

  1. Put onion in a pan and start to caramelize them.

  2. After 4-5 min add grated carrot, season with salt and continue to deeply caramelize the mixture. If onion and carrot start to stick to the pan add a little water to deglaze and continue to caramelize .

  3. Once carrot and onion are deeply caramelized add in garlic, tomato paste and 1 tsp of BBQ rub. Stir in and cook out for 1 - 2 min.

  4. Add 500g of passata and wash out the package with 150ml of water and add to the pan.

  5. Add 2 tsb ketjap manis and season with salt. On a medium low heat allow to simmer for 20 - 30min.

  6. Transfer the sauce to a smaller pot and puree with immersion blender until smooth.

  7. Season to taste and allow to cool (preferably overnight to intensify the flavors).

RICOTTA

  1. Heat milk and salt on stove till they reach a temperature of 80-90 celsius.

  2. Remove from heat and add vinegar, stir for 3-4 seconds and let stand for 6 min.

  3. Ladle curds into a strainer and let whey drain for around 10 - 15min.

  4. Transfer ricotta to bowl and allow to cool.

  5. Just before ready to build the lasagne add 2 tsp salt, 1 tsp of the bbq rub and 3 eggs lightly beaten to ricotta and combine.

Build Lasagne

  1. Add 1 tsp BBQ rub to BBQ sauce and if sauce is too thick, add water to thin out.

  2. Cut brisket into small cubes.

  3. Grate cheeses and mix together.

  4. Grease baking pan.

  5. First to go down is a thin layer of BBQ sauce then a layer pasta sheets, brisket, BBQ sauce, cheeses & ricotta.

  6. Continue to layer until baking dish is full. Top layer should be BBQ sauce, ricotta and cheese mixture should be on top.

  7. Place in 200 celsius preheated (fan forced) oven for 40 - 45 min.

  8. Remove from oven and let cool for 15 - 20 min before serving.
