Chicken & Cheese Flatbread Recipe with Skyr

Ingredients
7 average sized flatbreads
350g flour
4 and a bit tsp baking powder
300g skyr
2tsp salt
1Tbsp olive oil

Cheese
Method
For the flatbread add flour, baking powder and salt into a bowl and mix.
Add skyr and knead with a stand mixer or your hands till the dough is smooth.
Oil a bowl, add dough and close with a plate. Rest the dough for at least 30 minutes.
Divide dough into even sized portions and roll into balls.
On a floured work surface roll out dough balls.
Put some butter and oil in a large frying pan on a medium-high heat and then cook the flatbread until it is lightly golden brown on both sides.
Add filling and cook till cheese is melted.
Repeat until all the rolled dough is cooked.
