Chicken Souvlaki recipe including pita bread and Tzatziki

How to make chicken souvlaki from scratch, including recipes for pita bread and tzatziki with oven baked garlic.

Ingredients

Chicken

1kg chicken thighs, skinless
juice of half a lemon
1 Tbsp paprika powder
1 Tbsp oregano
salt, pepper, oil
1 capsicum

Pita Bread

350g flour
4 and a bit tsp baking powder
300g greek yogurt
2 tsp salt
1 Tbsp olive oil

Tzatziki

300g greek yogurt
1 cucumber 
2 tbsp lemon juice
4 garlic cloves (fresh or oven baked)
20g fresh dill
10g fresh mint
salt, pepper

Toppings
lettuce
1 red onion
2-4 tomatoes
1 avocado
180ml apple vinegar

Method

  1. Marinade chicken with paprika powder, oregano, lemon juice, salt and pepper. Put aside until needed.

  2. For the tzatziki remove the seeds from the cucumber and then grate it. Strain it through a hand towel or paper towel.

  3. Finely chop the dill and mint and mix everything in a bowl with the yogurt.

  4. We like to bake the garlic before adding it to the tzatziki. Just cut the top off a small bulb of garlic and drizzle with olive oil. Wrap it in tinfoil and place it in an oven at 180 degrees Celsius for 45 minutes. After its cooked press it out go the skin and add it to the yogurt mix. Alternative you can just crush the fresh garlic and add it to the yoghurt.

  5. To finish the tzatziki season with salt and pepper.

  6. For the pita bread add flour , baking powder and salt into a bowl and then mix the yogurt through with your hand until it becomes a dough.

  7. Let the dough rest till it is needed.

  8. Slice the lettuce, avocado, red onion and tomato for the topping. Season with the apple vinegar.

  9. Heat the butter and oil in a large pan on a medium to high heat and then add the sliced up capsicum till soft.

  10. Cook chicken until golden brown and cooked through in a pan or BBQ. Slice chicken into small pieces and mix with capsicum.

  11. Back to the pita bread. Portion the dough into about 100g balls and dust the work surface with some flour and roll balls out.

  12. Put some butter and oil in a large frying pan or a BBQ on a medium-high heat and then cook the pita until it is lightly golden brown on both sides. Repeat until all the rolled dough is cooked.

  13. Assemble the souvlaki to liking and ENJOY!
