3 different flavored couscous salads recipe

Inspired by MasterChef Professionals UK we made a quick couscous salad recipe with 3 different flavors. Mediterranean, Middle-Eastern and a lazy one with just a vegetable bouillon cube. We topped it with steamed and grilled eggplant and celery root.

Ingredients 2 portions

100 g CousCous + 1 1/2 times boiling water
10 Cherry tomatoes
1/2 Cucumber
5 Radish
1/2 punch Parsley
1 Eggplant
1/2 Celery root
olive oil, salt, pepper & lemon Juice to liking

Spice mixes ideas

Mediterranean: Marjoram, Basil, Rosemary, Oregano, Thyme, Balsamic vinegar

Middle Eastern: Sumac, Harissa, smoked paprika, dried Mint, Cumin

Lazy: 1/2 a bouillon cube

Method

  1. Cut up vegetables and parsley.

  2. Steam eggplant & celery root and season with salt once they soften.

  3. Grill steamed vegetables on a bbq or fry in a pan with some olive oil and set aside.

  4. Mix spice mix with dry couscous in a bowl and pour boiling water over it.

  5. For the bouillon cube version, dissolve cube it boiling water before adding it to the couscous.

  6. Cover bowl and let sit for 5-6 minutes. Uncover and fluff up couscous with a fork.

  7. Assemble salade season with salt, pepper, olive oil and some lemon juice.

  8. Top with steamed and grilled vegetables.
