Nonna`s Gnocchi
How to make my South Tyrolian Nonna`s gnocchi from scratch.
Ingredients Red Sauce
butter (or Butterschmalz)
1 kg mince (mix of pork and beef)
4 onions
4 slices bacon
parsley
1 kg passata or canned tomatoes
good squirt of tomato paste
Sambal Olek (chilli paste)
majoram
salt, pepper
Method for Red Sauce
Brown onions in butter.
Then add bacon and mince and brown.
Add tomato paste.
Add sambal olek, parsley, salt, pepper, marjoram and passata and let simmer on stove on low heat for 2-3 hour.
Red sauce finished!
Ingredients Gnocchi Dough
500 g plain flour
1,5 kg potatoes
50 g melted butter
3 eggs
grated parmesan cheese
nutmeg
salt, pepper
Method for Gnocchi Dough
Cook potatoes with skin on, then peel while still hot.
Put potatoes through a ricer straight on to your work surface.
Add eggs, nutmeg, salt, pepper, melted butter and flour.
Knead with hands.
Roll dough into logs and cut into pieces about 2 cm and press lightly with a floured fork.
Boil gnocchi in a pot of boiling, salted water until they float to the top and water starts to boil agin.
Then layer gnocchi, melted butter and sauce in a baking dish.
Sprinkle some parmesan cheese on top and serve.
