Krautstrudel (cabbage strudel) with Ham

Cheap and easy meal with cabbage. Make your own strudel dough with a tasty filling.

DOUGH
Ingredients

200g plain flour
100ml warm water
1 tsp salt
1 Tbsp vinegar
2 Tbsp oil

FILLING
Ingredients

1 cabbage finely sliced
150g ham roughly chopped (optional)
100g bread cubes or crumbs
80g butter
parsley
1 tsp caraway seeds
2 tsp paprika powder
1 Tbsp vinegar
1 Tbsp sugar
oil
salt, pepper

Method

  1. Add salt to flour and mix.

  2. Pour out on work surface and make a well.

  3. Slowly add the warm water to make a shaggy dough.

  4. Add vinegar and oil and knead till smooth.

  5. Coat dough with oil, cover and set aside to rest for 30-45 minutes.

  6. For the filling heat oil in a pot and add sugar.

  7. Cook till lightly brown then add ham and cook it for 1-2 minutes till crispy.

  8. Start adding cabbage hand by hand till it cooked down a bit.

  9. Add caraway seed, paprika, vinegar, salt, pepper and stir till mixed in.

  10. Close lid and let it cook for 10 minutes and set aside to cool.

  11. In a pan heat butter and brown the bread crumbs and set aside to cool.

  12. Preheat oven to 180 degrees celsius, fan forced.

  13. Roll out the dough on a parchment paper to a rectangular shape.

  14. Mix parsley with cabbage and spread out on the dough.

  15. Evenly spread the bread crumbs over the cabbage and roll dough till closed. Use a little bit of oil to make it easier to seal.

  16. Seal the 2 ends and coat Strudel with oil.

  17. Put Strudel on sheet pan and put in the oven and cook for 30-35 minutes.

  18. Put Strudel on a rack to cool for 10-15 minutes before cutting into it.
