Lemon Buttermilk Cake

An easy cake recipe with not too many ingredients including buttermilk and lemon.


Ingredients

150g butter (room temperature)
180g sugar
8g vanilla sugar
3 eggs
Juice of 2 lemons
Zest of 1 lemon
300g flour
1 tsp baking powder
150 ml buttermilk
Powdered sugar

Method

  1. Preheat oven to 175 degrees Celsius.

  2. Separate egg whites and yolks and beat egg whites till white peeks.

  3. In a bowl mix butter, sugar and vanilla sugar till with a mixer till smooth and creamy.

  4. Add egg yolks and combine with mixer.

  5. Add buttermilk, lemon zest, lemon juice and combine with mixer.

  6. Mix baking powder into flour and slowly combine with wet mixture.

  7. Fold egg whites (white peeks) into the batter.

  8. Butter cake tin and add batter.

  9. Bake in the oven for 50-60 minutes.

  10. Sprinkle powdered sugar over the cake and enjoy while still warm!
