Oma Resi's Austrian Apfelstrudel (apple strudel)

Ingredients

250 g flour (glatt)
20 g vegetable oil
1/2 tsp salt
100 ml tepid water
1,5 kg apples
3 Tbsp raisins
4 Tbsp sugar
8 g Vanilla sugar
80 g bread crumbs
80 g butter

Method

How to make the dough for apple strudel

  1. Add flour, salt and oil into a bowl and make a well in the centre.

  2. Start mixing with a fork while adding the water to bring the together.

  3. Once you formed a shaggy dough, dump out onto work surface and start kneading. Add water a little at a time if needed. (In the video skip to minute 1:50 to see how to knead the dough.)

  4. Dough is ready to be rested once it's smooth and springs back slightly when pressed.

  5. Cover with a warm bowl and let rest for at least 30min.

How to male filling for apple strudel

  1. Peel and slice apples on a mandolin or a box grater. Squeeze a little bit of lemon juice while slicing the apples to stop them turning brown.

  2. Once apples are sliced add raisins, sugar, vanilla sugar and cinnamon. Then mix to combined.

  3. Lightly brown off the bread crumbs in a pan with some butter.

  4. Line the table with a linen cloth and start to stretch out the dough on it. (In the video skip to minute 5:10 to see how to properly stretch out the dough.)

  5. Once dough is stretched drizzle with butter.

  6. Add bread crumbs to half of the dough. This step is important as it will soak up excess moisture from the apples while it cooks.

  7. Add apples on top of the bread crumbs. Do not tip the apple on top of the crumbs as there will be liquid that has already come out of the apples in the bottom of the bowl and you do not want this extra liquid in the final product.

  8. Skip to minute 7:10 in the video to see how to properly roll the strudel.

  9. Once the strudel is rolled place in a pan and lightly brush with melted butter (or egg).

  10. Poke some holes in the top to vent steam and prevent a blow out.

  11. Place in a 180 degree Celsius pre heated oven for 45 minutes.

  12. Remove from oven and lightly brush with melted butter, then let cool completely.

  13. Dust with icing sugar and serve with whipped cream.
