Beef Burger with Potato Buns
When you just crave a beef burger with no salad or sauce, this is the perfect recipe for you!
POTATO BUNS
Ingredients
320g (bread) flour
300g potatoes
2 egg yolks
120g milk
43g fresh yeast
50g unsalted butter
20g sugar
10g salt
1kg beef mince
1 Tbsp miso paste
salt, pepper
your choice of cheese and pickles
Method
Peel, dice and boil potatoes till soft.
Mash potatoes or put them through a ricer.
Add milk, flour, potatoes, egg yolks, yeast, salt and sugar into to a mixing bowl and mix.
After dough has come together add your butter.
If the dough is too wet add more flour - it should not stick to your fingers and feel smooth.
Roll the dough into a ball, coat a bowl in oil and put the dough in - also put some oil on the dough and put some plastic wrap over it.
Let the dough rise in the oven with no heat for 1,5 - 2 hours or till doubled in size.
Degas your dough by punching it, then roll it into 10 equal sized balls and put them on a tray.
Cover with a tea towel and let proof for another 60 minutes.
Preheat oven to 200 degrees.
Brush buns with egg white and milk and bake for 15-20 minutes or until golden brown on top.
Let them cool on a rack.
Combine mince, miso, salt and pepper and form into patties.
Grill on a a BBQ. Once you flip the patties add the cheese to met it.
Once cooked to you liking assemble the burger.
