Crockpot Pulled XO Beef Sliders with Chimichurri

Inspired by our Instagram feed we decided to make our own Hawaiian buns, filling them with dry aged Austrian XO beef, homemade red chimichurri and finishing it off with some melted cheese.

Ingredients pulled beef

1 kg XO beef
1 kg diced onions
1 Tbsp clarified butter
1 Tbsp tomato paste
1 tsp smokes paprika
1 tsp rub me tender (Sonnentor spice rub)
1 chili minced
2 garlic cloves minced
1 1/2 Tbsp Vegemite
1/2 liter dark beer salt Ingredients

Hawaiian buns

320 g (bread) flour
300 g potatoes
2 egg yolks
60 g milk
60 g pineapple & coconut juice
43 g fresh yeast
50 g unsalted butter
20 g sugar
10 g salt

Ingredients red chimichurri

2 red capsicum (blackened on bbq and peeled)
1 bunch of parsley
1/2 red onion thinly sliced
1 jalapeño chili
2 cloves of roasted garlic
1 Tbsp vinegar
1 Tbsp olive oil
salt, pepper

Method

  1. For the pulled beef brown meat in clarified butter on all sides in your Crockpot. Once browned remove from pot.

  2. Add diced onions to the Crockpot, season & caramelize.

  3. Once they have caramelized add in tomato paste, garlic, chili, spices and Vegemite and stir to combine.

  4. Add in some beer to deglaze.

  5. Add beef and it juices and cover with the rest of the beer.

  6. Cook on low for 12 hours. Pull beef at set aside till its is time to assemble.

  7. For the buns reel, dice and boil potatoes till soft.

  8. Mash potatoes or put them through a ricer.

  9. Add milk, juice, flour, potatoes, egg yolks, yeast, salt and sugar into to a mixing bowl and mix.

  10. After dough has come together add your butter.

  11. If the dough is too wet add more flour - it should not stick to your fingers and feel smooth.

  12. Roll the dough into a ball, coat a bowl in oil and put the dough in - also put some oil on the dough and put some plastic wrap over it.

  13. Let the dough rise in the oven with no heat for 1,5 - 2 hours or till doubled in size.

  14. Degas your dough by punching it, then roll it into 10 equal sized balls and put them on a tray.

  15. Cover with a tea towel and let proof for another 60 minutes.

  16. Preheat oven to 200 degrees.

  17. Brush buns with egg white and milk and bake for 15-20 minutes or until golden brown on top.

  18. Let them cool on a rack.

  19. For the chimichurri mix all ingredients with a blender till the right consistency. Add vinegar and salt a little bit a time to get the right taste

  20. Assemble the Sandwich and place in the oven and leave it in the till the cheese ooey gooey!
