Crockpot Pork Ribs & Apple Slaw
How to make tender Crockpot pork ribs with a refreshing apple slaw and zingy vinaigrette!
Ingredients
3 racks pork ribs
6 medium potatoes
mustard
rib rub (paprika powder, onion powder, garlic powder,
brown sugar, dried oregano, curry powder,
salt, pepper)
1 red cabbage
2 carrots
3 apples
parsley
olive oil
apple cider vinegar
1 lemon
1tsp honey
salt, pepper
Method
Remove membrane from the back of the ribs and trim (Check for any bone fragments).
Apply a light coat of mustard to ribs and then sprinkle an even coat of the rub over the ribs.
Wash potatoes, then poke holes all over them with a fork.
Rub potatoes with butter and sprinkle salt all over them.
Stand ribs up in the crock pot and support with potatoes like shown in the video below.
Cook on high for 6,5 hours.
For the vinaigrette add the juice of one lemon, a teaspoon of salt, pepper, honey and apple cider vinegar to a jar and shake till combined.
Add 3 parts olive oil to the had and shake again.
With an hour to go with ribs add thinly sliced cabbage, grated carrots and apples and finely chopped parsley to a bowl.
Pour dressing over slaw mixture and mix well.
Taste for seasoning. Cover and refrigerate till ribs are ready (maximum 2 hours).
Once ribs are ready carefully place on a parchment lined rack and put in the oven (high heat) for 5 minutes to firm up.
Plate ribs with potatoes, crock pot juices, slaw and enjoy!
