Sliders in Potato Buns

Recipe for sliders with potato buns and three kinds of patties - classic, Mark`s choice and vegetarian.

POTATO BUNS
Ingredients

320g (bread) flour
300g potatoes
2 egg yolks
60g milk
60g starch water
43g fresh yeast
50g unsalted butter
20g sugar
10g salt


Method

  1. Peel, dice and boil potatoes till soft.

  2. Strain potatoes and keep 60g of the cooking water. Mash you potatoes or put them through a ricer.

  3. Mix starch water, milk and dissolve the yeast in it.

  4. Then start mixing flower, potatoes, egg yolks, yeast mixture, salt and sugar together.

  5. After a couple of minutes add your butter piece by piece.

  6. If the dough is too wet add more flour - it should not stick to your fingers and feel smooth.

  7. Roll the dough into a ball, coat a bowl in oil and put the dough in - also put some oil on the dough and put some plastic wrap over it.

  8. Let the dough rise in the oven with no heat for 1,5 - 2 hours or till doubled in size.

  9. Degas your dough by punching it, then roll it into small balls (50-60g grams) and put them on a tray.

  10. Cover with a tea towel and let proof for another 60 minutes.

  11. Preheat oven to 200 degrees.

  12. Brush buns with egg wash and bake for 15-20 minutes or until golden brown on top.

  13. Paint them with melted butter while still hot and let them cool on a rack.

PATTIES CLASSIC
Ingredients

400g beef mice
salt, pepper

Method

  1. Combine ingredients.

  2. Portion out patties into 100g pieces.

  3. Form patties slightly bigger than buns.

  4. Cook patties with cheese on a BBQ or in a pan till cooked to liking.

PATTIES MARK`S STYLE
Ingredients

250g beef mice
250g pork mice
70g Finley Grated Grana Padano cheese or any cheese of your liking
4-5 finely diced button mushrooms
1 finely sliced onion
1 finely sliced clove of garlic
1 tsp paprika powder
1 tsp dried oregano
salt, pepper

Method

  1. Saute onions, garlic and mushrooms and let cool.

  2. Combine all ingredients.

  3. Portion patties into 100g pieces.

  4. Form patties slightly bigger than buns.

  5. Cook patties with cheese on a BBQ or in a pan till cooked to liking.

PATTIES VEGGIE
Ingredients

400g black beans
2 eggs
4 finely chopped spring onions
2-3 grated carrots
200g feta
400g finely chopped beet root
85g self raising flour
salt, pepper

Method

  1. Crush beans with a fork in a bowl.

  2. Combine all other ingredients to the bowl and mix well.

  3. Spoon patty mixture straight into a pan with oil.

  4. Cook patties till caramelized on each side.

  5. Keep patties warm in the oven on a tray.

BURGER SAUCE
Ingredients

2 finely diced onions
25g butter
2-3 pickles
tomatoes sauce/ketchup
mayonnaise
worcestershire sauce
1 tsp sugar
salt, pepper


Method

  1. Caramelize onions in butter with sugar.

  2. Comine ingredientes to liking.
