Topfennockerl (quark dumplings) & Sweet Carrots

A delicious vegetarian option for a quick and easy dinner using quark.

Ingredients

500g course quark 
350g normal quark 
3 eggs
250g flour
50g finely chopped chives
nutmeg, salt, pepper

1kg carrots
100g  butter
90g sugar
parsley
sour cream
salt, pepper

Method for Topfennockerl

  1. Add quark, eggs, chives, nutmeg, salt and pepper to a bowl and mix.

  2. Add flour and mix till combined.

  3. Bring a pot of water to a simmer.

  4. Form Topfennockerl with a wet spoon and drop into the simmering water.

  5. Once they are floating cook for another 5 minutes.

  6. Remove from pot and put them on a dish. Sprinkle with a little bit of salt and drizzle over a little bit of melted butter.

Method for sweet carrots

  1. Peel and cut carrots into small pieces.

  2. Melt butter in pot and add sugar to caramelize.

  3. Once sugar is caramelized add carrots, salt and pepper.

  4. Place lid and cook till carrots are soft.

  5. Once carrots are soft take off the heat and add sour cream and parsley.

  6. Reddy to serve!
