Krautfleckerl (caramelized cabbage pasta)

This healthy and hearty dish is perfect to incorporate cabbage into your diet. Its quite simple, especially if you buy the pasta.

Ingredients

3 eggs
300g flour
1 cabbage
1 onion finely chopped
3 tbsp sugar
1 tbsp white wine vinegar
chive (or parsley)
clarified butter
salt, pepper

Method

  1. Add flour, eggs and salt to a stand mixer and mix till it pulls away from the side and is nice and smooth. About 5 minutes.

  2. Wrap in glad wrap and rest for 30 minutes at room temperature.

  3. Cut cabbage into roughly 1 cm by 1 cm squares.

  4. Add salt to cabbage and mix. Let stand for 30 minutes to draw out moisture in cabbage.

  5. Roll out past and cut into roughly 1 cm by 1 cm squares. Set aside for later.

  6. Squeeze out as much moisture as possible from cabbage.

  7. Heat a pot and melt clarified butter. Add onion and sauté.

  8. Remove onion from the pot and caramelize sugar.

  9. Add the onions back into the pot and also the cabbage. Add 50 ml of liquid and vinegar. Mix well and cook for 30 minutes.

  10. After 30 minutes add salt and pepper to taste.

  11. Bring a pot of salted water to boil and cook pasta till al dente (for about 1 minute)

  12. Mix pasta through cabbage and let it sit off the heat for another 5 minutes.

  13. Garnish with chive and ENJOY!
