Crockpot Beef Pies

We took inspiration from an Austrian Gulasch recipe for these delicious crockpot beef pies. So we used the same amount of onions as we used beef and also some paprika powder.

Ingredients for 4 pies

puff pastry
1 egg (to brush the pastry)
1 kg beef
1 kg onion
200 g mushrooms
3 Tbsp paprika powder
2 cloves garlic
thyme
salt
penut oil


Method

  1. Add oil with a high smoke point to the crockpot.

  2. Brown beef and once it is ready remove from the crockpot.

  3. Add onions in the pot and season them with salt.

  4. When onions are deeply caramelised add the paprika powder and cook off for about 1 minute.

  5. Then add garlic and thyme and also cook off for another minute or two.

  6. After that add the sliced mushrooms and the beef back in.

  7. Set crockpot to low heat and let everything cook for 12 hours with the lid on.

  8. Check if there is enough liquid after about one hour.

  9. After the 12 hours adjust the seasoning and remove from crockpot.

  10. Set mixture aside to cool.

  11. Cut out the puff pastry into circles and add to greased pie tin.

  12. Add filling then place the top on. Take care to seal top and bottom together properly.

  13. Brush top of pie with egg wash.

  14. Cut vent hole in centre of the pie-top.

  15. Place into a pre heated 200 degree Celcius oven for 15-20 minutes.

  16. At the 12 minute mark keep an eye on it and remove when it is nicely browned on top.

  17. Remove from the tin and optionally sprinkle with some flakey salt and let cool slightly on a wire rack before consuming.
