Kimchi Cheesy Johnny Cakes Recipe

A new take on Caribbean dumpling called Johnny Cakes. We added kimchi to spice things up and mozzarella for some gooeyness. And instead of deep frying them in oil, we used an air-fryer.

Kimchi Cheesy Johnny Cakes

Ingredients

Johnny Cakes

• 200 g kimchi
• 300 g AP flour
• 10 g baking powder
• 5 g brown sugar
• 5 g salt
• 20-50 ml water depending on your flour
• 150 - 200 g Mozzarella, shredded

Instructions

1. Start by blitzing the kimchi to a fine consistency in a food processor.
2. Add flour, baking powder, salt, sugar and kimchi puree in a big bowl and combine with a fork. Then gradually add the water to form a dough.
3. Then start kneading the dough with your hands, but try not to over-knead the dough.
4. Form dough into a ball, place in a bowl and cover. Set aside to rest for 45 minutes to 1 hour.
5. Divide dough into 8 equal parts. Flatten out each part and fill with mozzarella.
6. Make sure the top side has not too much flour on it otherwise it will be hard to close the parcel because it will not stick.
7. Once they are all filled, brush with neutral oil and place into a 200°C preheated air fryer for 4 minutes.
8. After 4 minutes turn them around and fry for another 4 minutes.
9. Enjoy while cheesy is still melted!
