Pulled Pork filled Potato Cakes and Tomato Relish and Tomato Relish

For this recipe we had to use ingredients we had at home, since all shops were closed for a public holiday. We had some frozen pulled pork and many veggies at home. We enjoyed this recipe idea a lot and will do it again.

Pulled Pork filled Potato Cakes and Tomato Relish

Ingredients

Pulled Pork filled Potato Cakes

• 400 g pulled pork
• 1 kg potatoes
• 50g butter
• 1 egg
• 2 Tbsp starch
• Salt
• Breading station:
• AP flour
• Eggs
• Panko breadcrumb
• Salt

Tomato Relish

• 5 medium size tomatoes
• 5 shallots, diced
• 2 cloves garlic, minced
• 1,5 Tbsp brown sugar
• 1/4 Tbsp all spice
• 1/2 Tbsp ginger powder
• 4 Tbsp white wine vinegar
• 1 Tbsp fish sauce
• 1 Tbsp tomato paste
• Pickled chili (optional)
• Salt

Instructions

Pulled Pork filled Potato Cakes

1. Peel and boil, potatoes until tender.
2. Once potatoes are boiled, press through a ricer.
3. Add butter, salt, and potato starch to the potatoes, then mix thoroughly.
4. Form potato mixture into 50g balls.
5. Press potato balls into a disc shape, add some pulled pork and place another potato disk on top and seal them.
6. First coat the potato cake in plain flour, then dip in egg mixture, then coat in the Panko breadcrumb, then put back in the egg mixture, and then back in the Panko for a double coat.
7. Add the potato cakes into a 200°C preheated air fryer for six minutes. Give a little spritz of spray oil before closing it after six minutes flip the potato cakes give another little spritz of oil and air fry for another six minutes.

Tomato Relish

1. To make the relish boil the tomatoes for five minutes. Strain the water, peel the tomatoes and cut into chunks.
2. Add all the ingredients to a pot and cook for around 10 minutes. Once mixture has cooked for around 10 minutes remove from heat, blend too desired consistency and season to taste.
