Slow Cooked Crockpot Pork Ribs
on Potato Buns Recipe

This is how we made the pork rib sandwich at Mark’s Midday Menu. We slow cook the pork ribs in a Crockpot for 12 hours and season them with a special rub. Also we show you how to make the fluffiest potato buns.

Ingredients Pork Ribs

1 - 2 racks of pork ribs
mustard
smoked paprika
curry powder
onion powder
oregano
brown sugar
salt
pepper
BBQ Sauce

Ingredients Potato Buns

350g (bread) flour
300g potaos
2 egg yolks
60g milk
60g starch water
43g fresh yeast
50g unsalted butter
20g sugar
10g salt

Ingredients Coleslaw

red cabbage
apple
buttermilk
apple cider vinegar
salt
pepper
left over rub spices

Method Slow Cooked Pork Ribs

  1. Remove membrane off the back of the ribs and cut off access fat or meat you don’t want.

  2. Rub mustard all over the rack and cover the ribs with the spice mix.

  3. Place meat in the Crock-Pot upright and cook on low for 12 hours.

  4. After 12 hours carefully remove from Crockpot and place on a parchment lined baking tray.

  5. Paint BBQ sauce on the top of the ribs and bake on high heat in the oven until the sauce caramelizes on the ribs.

  6. Take then out, let cool and remove bones.

Method Potato Buns

  1. Peel, dice and boil potatoes till soft.

  2. Strain potatoes and keep 60g of the cooking water. Mash you potatoes or put them through a ricer.

  3. Mix starch water, milk and dissolve the yeast in it.

  4. Then start mixing flower, potatoes, egg yolks, yeast mixture, salt and sugar together.

  5. After a couple of minutes add your butter piece by piece.

  6. If the dough is too wet add more flour - it should not stick to your fingers and feel smooth.

  7. Roll the dough into a ball, coat a bowl with oil and put the dough in - also put some oil on the dough and put some plastic wrap over it.

  8. Let the dough rise in the oven with no heat for 1,5 - 2 hours or till doubled in size.

  9. Degas your dough by punching it, then roll it into small balls (100g grams) and put them on a tray.

  10. Cover with a tea towel and let proof for another 60 minutes.

  11. Preheat oven to 180 - 200 degrees.

  12. Brush buns with egg wash and bake for 8-10 minutes or until golden brown on top.

Method Coleslaw

  1. Slice cabbage in to thin pieces.

  2. Grate apple and press out access juice.

  3. Mix with dressing.
