Kimchi Toastie Flatbreads

We wanted to see what the cheese and kimchi hype is all about, so we made homemade flatbreads, caramelized onions and chicken to go with cheese and kimchi.

Kimchi-Toastie Flatbreads

Ingredients

Flatbread dough

• 350 g flour
• 4 and a bit tsp baking powder
• 300 g skyr
• 2 tsp salt
• 1Tbsp olive oil

Filling

• 2 onion, sliced
• 500 g chicken thighs, cut into stripes
• 250 g kimichi
• 200 g cheese (Cheddar, Mozzarella or any cheese you like)
• 3-4 Tbsp oil
• salt

Instructions

Flatbread

1. For the flatbread add skyr, flour, baking powder and salt into a bowl and mix.
2. Knead with a stand mixer or your hands till the dough is smooth.
3. Oil a bowl, add dough and close with a plate. Rest the dough for at least 30 minutes.
4. Divide dough into even sized portions and roll into balls.
5. On a floured work surface roll out dough balls.
6. Add some oil in a large frying pan on a medium-high heat and then cook the flatbread until it is lightly golden brown on both sides.

Filling (caramelized onions, chicken, kimchi and cheese)

1. For the caramelized onion slice onions, then add oil and onions to a pan and stir to coat. Adds salt.
2. Place lid on pan and keep on a medium heat stirring occasionally until onion is super soft, around 20-30 min. Maybe you have to add a splash of water so they don't burn.
3. Remove lid and turn heat up to medium high and start to caramelize the onion.
4. Once they are deeply caramelized remove from pan and set aside till ready to use.
5. To cook the chicken add some oil to a pan and cook till slightly browned on the outside and cooked on the inside. Then set aside till ready to use.
6. To assemble the toastie leave flatbread in a hot pan and layer cheese, chicken, onion and kimchi (and maybe cheese again) on one side. Flip the other half over and cook over medium-low heat till cheese is melted.
