Buffalo Chicken Subway Sandwich

This is how you make the buffalo subway chicken sandwich, but better. We grilled the spiced chicken thighs and used Frank’s hot sauce for some extra heat and acidic kick. To go with the we made a blue cheese ranch sauce.

Buffalo Chicken Subway Sandwich

Ingredients

Chicken

• 500 g boneless, skinless chicken thighs
• salt
• black pepper
• cayenne pepper

Blue Cheese Ranch Sauce

• 1 egg
• 2 Tbsp buttermilk
• 1 Tbsp squeeze of lemon
• 1 heap Tbsp sour cream
• small crushed garlic clove
• one spring onion (white part)
• salt
• 200 -250 ml neutral oil
• 2 Tbsp dill, chopped
• 70 g blue cheese

Buffalo Hot Sauce

• 1 bottle Frank's Hot Sauce
• 1 tsp vinegar
• 5 dashes of Worcestershire sauce
• 80g butter
• Cayenne Pepper, to tase

Sandwich

• 4 small Baguettes or sandwich roll
• 1/2 iceberg lettuce head, shredded
• 1/2 cucumber
• 10 cherry tomatoes
• 1/2 small jar of black olives

Instructions

Chicken

1. To start the sandwich prepare you chicken thighs by cutting off any parts you don't like and try to make them the same thickness.
2. Heat your BBQ or pan.
3. Season chicken with, salt, black pepper and cayenne pepper.
4. Cook chicken on one side and once its brown flip it over to the other side till they reach an internal temperature of 80°C
5. Set aside and cut into bite size pieces ones your ready to assemble.

Blue Cheese Ranch Sauce

1. Start by adding egg, buttermilk, lemon, sour cream, garlic, spring onion, salt and neutral oil to a tall sided container.
2. Use an emulsion blender to combine everything.
3. Next add dill and blue cheese and mix.
4. See aside till ready to use.

Buffalo Hot Sauce

1. Add the whole bottle into a sauce pan, then add vinegar and Worcestershire.
2. Over a medium low heat start adding the butter while constantly mixing the sauce.
3. Once butter has melted and is incorporated taste and season with Cayenne pepper if you like.
4. Add the resting juices from the chicken to the saue
5. Mix half of the sauce with the chicken pieces and mix.
6. Set aside the other have till ready to assemble.

Assemble Sandwich

1. To assemble start by cutting the the sandwich to open.
2. Spread the blue cheese ranch sauce on the bottom.
3. Followed by iceberg lettuce, then chicken and some more of the buffalo sauce.
4. Next add cucumber, tomatoes and olives.
5. To finish add more of the blue cheese ranch and extra salt and pepper.
